Eight maids a milking…or were they eating Lemon Bars……

Christmas is fast approaching.  We’re busy getting ready for special times with family and friends.  Here’s another cookie that has become a tradition.  With fresh lemons available through the year, you can throw this together quickly with a just few other staples from your kitchen shelves. This is another very easy treat to make.  I realize I’ve been promoting a lot of sugar with all of these cookie recipes and for the next few days we’ll get back to a little healthier eating with some simple ideas for quick meals and appetizers to share at get-togethers.

But without further adieu, here are the Lemon Butter Snowbars that I’ve been making for years.  I still have the original recipe that I cut from a carton of Land O’Lakes Butter.  These melt in your mouth and are sure to become a favorite in your family!Lemon Bar

 Lemon Butter Snowbars

Crust

½ cup salted butter, softened

1 ½ cups all purpose flour

¼ cup sugar

 Filling:

2 eggs

¾ cup sugar

2 tbsp all purpose flour

¼ tsp baking powder

3 tbsp freshly squeezed lemon juice

Confectioners sugar for top.

Preheat oven to 350  In mixer bowl combine crust ingredients.  Mix on low speed with electric mixer until blended, about 1 minute.  Pat into ungreased 8” square baking pan.  Bake near center of oven for 15-20 minutes or until golden brown on edges.  When done, cool for 10 minutes.

While crust cools, combine filling ingredients mixing well with electric mixer.  Pour over cooled crust.  Return to oven for 18-20 minutes or until set.  Sprinkle with confectioners’ sugar.  Cool.  Cut into 16 bars.
